Crock-Pot Chicken Tortilla soup

As a mom and wife. Sometimes I need a meal I can throw together that isn’t expensive and doesn’t take a lot of time. That means I use my crock-pot ALL of the time. Usually 1-3 times a week. There is no shame in my crock-pot game. (Yes I know I am lame)

Crock-Pot Chicken Tortilla soup


  • 2 Chicken breasts
  • 2 Cans of Beans ( You can use black or great northern)
  • 2 Bell peppers (Chopped up)
  • 1-2 Cans of corn
  • 1 Can of diced tomatoes
  • 1 Large onion
  • 32 oz of chicken broth
  • Taco Seasoning OR make your own.


  • Jalapeno
  • Low sodium beans or corn
  • Cheese
  • Avocado
  • Sour cream (or Greek yogurt)
  • Cilantro
  • Tortilla chips

I throw this all in a crock-pot on low for 8 hours. Or you can put this on high for about 4-5 hours. This is a major go to, especially in the fall/winter/spring.
